Brazilian Cod Fish Cakes


 3/4 lb dry salt cod, hydrated and mashed
 1 cauliflower, boiled, peeled and mashed
 2 tsp parsley, minced
 1/2 onion, finely minced, sautéed
 1 egg
 1 tbsp grape seed oil
 salt, to taste



In a medium-sized bowl, add mashed cauliflower and sautéed onion after ingredients are cooled. Add parsley and mashed fish. Once all ingredients are mashed together, add in the egg and combine the mixture.


Using a large spoon, spoon out one ball of the mixture. Form the ball into a tri-sided croquette, using another spoon to help if form the shape.


In a large skillet, heat oil over medium-high. Once the pan is hot, turn down heat to medium and place croquettes in oil and fry for 10-15 minutes or until all sides are golden-brown. Drain excess oil from cakes on a paper towel.


Ready to Serve!
